Sweet Potato Cobbler - My Way

Okay, I had to find a recipe for this because my daughter brought some home one day for me to try. She said "mommy this is so good, I brought you some to taste!" So I taste it, and EAT IT ALL!!!
She was upset but she got over it when I made some - LOL

Here's my version of a tasty Southern treat!

Preheat oven to 400
Preparation time: 30 minutes
Bake time: 30-40 minutes

2 lb Sweet Potatoes (peeled)
3 1/2 Cups water
1 1/2 Cups white granulated sugar
3 Tablespoons all purpose flour
1/2 teaspoon cinnamon
1 Tablespoon vanilla
3/4 Cup Butter or Margarine
Choose your own crust BUT I went the easy route and used a
frozen deep dish pie crust and broke it up and placed it on top.

Peel and slice potatoes 1/4 inch thick.
In a saucepan with the 3 1/2 Cups water, cook sweet potatoes until tender, about 10 minutes.
Drain all liquid and save it! Don't throw this out!
Layer potatoes in a well greased 13 X 9 inch pan
Add in reserved liquid (1 1/2 cups)
Combine sugar, cinnamon, flour in a bowl and mix well.
Sprinkle this over the potatoes.
Dot with butter and cover with your pastry crust.
Sprinkle crust with a little bit of sugar.

GAS Attitude?

Do you have a GAS attitude? Do you really care about things that are going on around you? My co-worker and I talked about how some people just don't GAS!! If you are wondering what the heck I'm talking about is that some people just don't "Give A Sh** (or a squat!) Should they take "Beano"?

My job is customer service in a utility billing office. Earlier this week we had to disconnect a resident for non-payment. This person cussed worse than a sailor! She demanded that the electricity be turned on immediately. She really didn't care what words were spewing out of her mouth. She told me her mother was sitting right beside her. I thought to myself what the heck?? Sad situation, but true.

Today I had to move my car at work because the guys were cutting the grass. Ok, so as I am moving the car they continue to do the "weed-eater"!! GEEZ LOUISE!!! Can't you see me moving my car like you asked? All I hear is little pebbles hitting the car!! The car recently had hail damage and I just got it back from the shop so it looks like brand new! So here we go again ... the "I don't GAS" attitude in full force.
Take time to care about others and respect their space. The good news is God woke my family up today and woke you up so you could read this. There are so many people hurting in this world. Hoping you all have a great day. Thanks for stopping by!

Jett's Grilled Cabbage Recipe


Hello everyone! It's almost Spring and time to fire up the grill. Here's a great way to fix cabbage. Let me know how ya like it!

How to make it

  • Tear the heavy duty foil off to have 1 large sheet.
  • Fold up sides of the foil to hold the cabbage
  • You might have to work with it to fit it all in.
  • Add your seasonings with the butter or margarine
  • Wrap another large piece of foil around the first piece to resemble a large hand-bag.
  • Wrap the foil down so when you set this on the grill you can pick it up and move if necessary.
  • Leave on medium heated grill rack and put the lid on for approximately 45 minutes to 1 hour

My Homemade Caramel Adventure

These were so easy!You will need a microwave oven for this one.

1/4 Cup Butter
1/2 Cup white sugar
1/2 Cup brown sugar
1/2 Cup light Karo syrup
1/2 Cup Sweetened Condensed Milk


Combine all ingredients
Cook 6 minutes, stirring every 2 minutes
Stir and pour into lightly greased dish
Let cool
Cut, wrap in wax paper and store in airtight container.

When I finished making these my hubby thought it looked like saltwater taffy! LOL

Hershey's Perfect Chocolate Cake

This was definitely the "perfect" cake for chocolate lovers! Instead of using the boiling water it called for, I used coffee. Great flavor and so moist!! This had to be one of the easiest cakes I've ever made!
